Who wants to pay $120 for a pound of cheese? For scale, if you ever go to the cheese section at the grocery store, you can get one of those palm-sized wedges for maybe $4 or $6, and even the nicer ones rarely cost more than $15 or so. Asking for $60 for a little tiny wedge of cheese just isn’t going to appeal to most crowds, who just want to make a nice charcuterie board or have some cheese to feed to their kids.
